Sweet Potato Soup I (M, KLP, TNT)

Serves: 6 to 8

4 to 5 sweet potatoes/yams, cubed
2 medium onions (or 1-1/2 large)
2 tbsp. clear chicken broth OR bouillon cubes
Cayenne pepper to taste
8 cups water
Optional: 3 tbsp. coffee creamer (can add as want/need)

In a pot, sauté onions until transparent. Add cubed sweet potatoes (yams) and sauté for another 5 minutes. Add water, consomme, or broth. Cook for 40 minutes.

Blend/puree. Add cayenne pepper to taste.
