1 package puffed pastry, room temperature
First, wilt the spinach in a frying pan by spraying the pan and the spinach with a spray of oil. Remove from pan. Sauté the onion until soft then sauté the mushrooms until barely cooked.
Second, open the puffed pastry and cut each piece down the middle to make 4 pieces.
Next layer the vegetables in the middle of the pastry (leaving one third of the pastry on each side to wrap. Put a couple of tablespoons of Alfredo sauce on the top of the veggies. Place a salmon fillet on top of that and more Alfredo sauce on the salmon. Wrap the pastry on top sealing the edges with your fingers and a fork. Poke holes in the top with the fork.
Bake at 350°F until the salmon is cooked (20 to 30 minutes) and the pastry is browned. Serve with the rest of the Alfredo
Sauce.

We had a wonderful dinner the other night. I took puffed pastry and put spinach, salmon, and
Alfredo sauce on it. It was wonderful. The ingredients would be to taste, if you like a lot of spinach, increase the amount. The same with the mushrooms. The fillets should be one portion for the person you are feeding.
