Fish Cakes, No Carb (P, KLP, TNT)

Serves: 4 (Yield: 10 fishcakes)

1 to 1-1/2 lb. hake, cut in large chunks
1/2 onion, quartered
1 shallot, quartered
3 egg whites
1 oz. dried wild mushrooms, ground
Salt to taste
Pepper to taste
Oil of choice for frying

Process fish, onion, and shallot until all combined and finely chopped. Remove mixture to a large bowl and mix in remaining ingredients.

Heat oil in a cast iron skillet. Pat a tiny amount of mixture into a small patty and fry in order to taste for seasoning. Adjust seasoning as needed and fry the remaining amount in patties approximately 3" across and 1" thick.
