2-1/2 cups grated zucchini or yellow summer squash (or a combination)
Mix all ingredients together.
Shape into patties. Fry in a mixture of half-oil/half-margarine at about 350°F until golden.
Turn and fry the other side. Be sure to turn only once. Drain on paper towels. Serve hot.

1 cup fine bread crumbs (soft)
1 beaten egg
2 tablespoons melted margarine
1 tablespoon Old Bay-type Seasoning (click here for recipe)
4 tablespoons flour
1 small onion, chopped fine
I usually drop these from a tablespoon and flatten slightly. I also fry them in the electric skillet or on a griddle.
