1 pound puff pastry dough
Amounts are flexible. Add enough instant potatoes to the spinach to soak up the liquid. Add seasonings.
Divide dough into two or three pieces (depending on the size of your baking sheets), and roll out fairly thin. Spread with spinach mixture and roll up as for
jellyroll. Seal the edges.
Place, seam side down, on a cookie sheet or baking pan which has been sprayed with vegetable cooking spray (or oiled).
Brush with egg and sprinkle with seeds. Bake at 400°F until golden brown. Slice into 1" slices, and serve.

Instant mashed potato granules or flakes
Salt, pepper, onion powder, garlic powder to taste
1 egg; beaten
Sesame seeds
The filling can be made with sautéed mushrooms and onions in place of the spinach.
