Souffle, Spinach I (D, KLP, TNT)

Serves: 6

2 packages chopped spinach; cooked and drained
6 egg whites; or 4 eggs
1 potato; cooked and grated
1 teaspoon salt
2 cups lowfat cottage cheese

Mix all ingredients. Put into sprayed baking dish.

Bake at 350°F for about 1 hour, or until firm.
