Shepherd's Pie, Lentil (D/P, TNT)

Serves: 6

1 onion, diced
1 clove garlic, diced
1 red bell pepper, diced
1 carrot, diced fine
3 tomatoes, diced, or 1 can crushed
1/2 cup lentils, uncooked
1 cup chopped mushrooms
1 package frozen spinach
1 or more cups of vegetable broth
1 tbsp. thyme
1 tsp. marjoram
3 cups mashed potatoes
Nutritional yeast

Sauté onion, garlic, red bell pepper, and carrots until slightly browned.

Add crushed tomatoes, lentils, mushrooms, spinach and veggie broth (start with 1 cup of broth and add more as needed until lentils are cooked), and the spices to taste. Simmer until thickened.

Put in a casserole dish, top with potatoes, sprinkle with nutritional yeast and paprika.

Bake at 350°F, for about 20 to 30 minutes.
