Quiche, Zucchini Mushroom (D/P, TNT)

Serves: 4 to 6

1 pie crust

4 to 5 zucchini
3 onions
1 4-oz. can mushrooms
2 tbsp. coffee rich or milk
5 tbsp. cornflake crumbs
1 tbsp. mayonnaise
1/2 cup oil or margarine
1/2 package onion soup mix
Cornflake crumbs, to sprinkle on top

Peel and cook zucchini until tender. Drain and mash.

Fry onions and mushroom in margarine or oil. Mix mushrooms, onions, and zucchini with rest of ingredients. Pour into pie crust.

Sprinkle cornflake crumbs on top. Bake at 350°F for 45 minutes.

Poster's Notes:
Sometimes I end up with enough to fill two pie crusts. So I make two and freeze one for later.
