Quiche, Spinach Low-Fat (D, TNT)

Serves: 6

Filling:
2 boxes frozen spinach, defrosted and drained of all water
2 eggs
4 egg whites
1 cup plain yogurt or low-fat sour cream
2 tbsp. flour
1/2 tsp. baking powder
1 tbsp. soup mix
Pinch salt
Pinch pepper
1 tbsp. chopped dill
3 ounces any hard cheese you like, grated
1 tbsp. Parmesan cheese, optional
8 ounces farmer white cheese or ricotta

Dough:
3 cups flour
1 cup low-fat sour cream
4-1/2 tsp. baking powder
7 ounces margarine

Make Filling:
Mix all ingredients together in a large bowl and set aside.

Make Dough and Assembly:
Place ingredients in the food processor and make a dough. Divide it into 4 balls. Using one ball, roll out for bottom crust. (You can freeze the other three.) Cover with filling and smooth top.

Bake in preheated 350°F oven 40 to 45 minutes or until light brown.
