Quiche, Spinach III (P, TNT)

3 tbsp. oil
2 large onions, chopped
2-1/2 cups steamed or frozen spinach
3 cups tofu, crumbled
1 tsp. salt (or to taste)
1 tsp. garlic powder
1/4 cup nutritional yeast flakes
1 tbsp. lemon juice

Heat oil in large frying pan. Add onions and sauté until starting to brown. Add spinach; sauté another minute or two.

Combine remaining ingredients and add onions and spinach. Pour into a partially-baked 9" pie shell.

Bake at 400°F/200°C about 30 minutes.

Poster's Notes:
If you substitute tofu for cottage cheese in any other quiche recipe, you might want to add the yeast flakes. It gives something of a cheesy taste.
