1 pie crust, partially baked
Sauté onion and mushrooms until golden, wring spinach dry, combine all ingredients, put in pie shell and back 350°F for 30 minutes.

1 4-oz. can chopped mushrooms
1 medium onion, chopped
2/3 cup Coffee Rich (I have used the non-fat)
3 eggs (I have used Egg Beaters)
1 10-oz. package frozen spinach, thawed and wrung dry
salt and pepper to taste
1 package "MBT" - this is a seasoning mix; I have also made it with my own choice of seasoning
When I used to have a lot of company for holidays, I would make 6 or 8 of them at a time and freeze; worked out well.
