Quiche, Crustless Spinach-Cheese I (D, KLP, TNT)

Serves: 6 to 8

2 10-ounce packages spinach, frozen chopped
8 medium eggs
2/3 cup onion, chopped
3 cups part-skim ricotta cheese
3 cups part-skim mozzarella cheese, shredded
4 tablespoons Parmesan cheese, grated
Nutmeg, to taste (optional)

Preheat oven to 325°F. Use olive oil to grease rectangular baking dish.

Drain and squeeze out all the liquid from cooked spinach and mix in nutmeg if you wish. Beat the eggs. Mix in spinach, onion, ricotta cheese, mozzarella cheese. Sprinkle Parmesan cheese over top.

Bake for 1 hour and let "rest" a few minutes before cutting into squares. Leftovers can be reheated the next day.

Here's is a crustless recipe that I adapted from the web. I double it and bake it in a square or rectangular baking dish. You can serve it with salsa, tomato sauce, or even sour cream.
