Fillings as desired (2 to 4 cups of veggies)
Heat oven to 180°C (350°F). Spray a quiche dish with non-stick baking spray.
Place fillings in dish and sprinkle cheese over.
Place custard ingredients in bowl (in order they are given above) and beat well to get rid of any lumps.
Pour custard mixture over fillings and bake in oven until set (approximately 35 minutes).
I normally cook mine in the microwave (50 to 70% power for approximately 15 minutes) until custard is set; if necessary I brown it off in the oven for approximately 5 minutes.
The above quantities are enough for a standard size quiche dish (approximately 25cm in diameter). I normally double the ingredients and put into a rectangular casserole dish.
