9" pie crust (I just buy the pre-made frozen ones)
Chop onions, sauté in butter or oil until soft. Transfer to bowl, mix in everything else, blend well. Fill crust and bake uncovered at 350°F for about 30-35 minutes, until the top browns.

butter or oil (for frying)
8 oz. grated mozzarella cheese
8 oz. grated mild cheddar cheese
4 eggs
1/2 cup fresh parsley, chopped
2 tablespoon dried sage
1 tablespoon sugar
2 teaspoon cinnamon
1 teaspoon ginger
handful currants (I use dried)
