2 10-ounces boxes chopped broccoli, thawed
Coarsely chop mushrooms in food processor. Coarsely chop scallions. Mix the thawed broccoli, mushrooms, scallions in large bowl.
Blend eggs and milk in another bowl, add to vegetable mixture. Mix shredded cheese and flour together, add to vegetable mix. Season to taste with salt and pepper. Pour into two thawed, but unbaked pie shells and bake in 350°F oven.

I used about 1 tsp. salt, a couple of shakes of pepper.
This is the easiest and fastest quiche recipe I have made. You can use other cheeses (the original recipe calls for cheddar); egg beaters instead of whole egg, regular onion instead of scallions. Very versatile, and again, delicious.

1/2 to 3/4 cup milk
Salt, to taste
Pepper, to taste
2 deep dish pie shells
I probably used closer to 3/4 cup of milk, since the vegetable quantity is more than the original recipe calls for.
