1 kilo flour
Mix tomato, paste, garlic, onion, pepper, basil, salt and oregano in the food processoruntil well blended. The sauce should be thick.
Mix flour, water, oil salt and yeast together. Knead dough and let rise for 15-20 minutes. Divide dough into six equal balls. Roll each into a rectangle to fit your pans (I use 8"x10" or 9"x13" pans...the dough fits!). Line the bottom of the pan with parchment paper. Press the rectangle of dough into the bottom of the pan.
Spread a moderate-sized layer of tomato sauce on top of the dough. Fill with your choice of: olives, mushrooms, onions, sliced red peppers, cooked broccoli, tuna, or any combination thereof. Sprinkle with grated cheeses. Cover with a second rectangle of dough. Brush with beaten egg and sprinkle with sesame seeds.
Bake in a moderate oven (if it is too hot, the filling is done before the bottom dough) for 30-40 minutes. Enjoy!
