Make Caramelized Onions:
Sprinkle cooled onions with other ingredients on top of the pizza.

1 large onion, halved and sliced very thin
1 tsp. sugar
1 eggplant, sliced into very thin rounds
1 to 2 red peppers, roasted, peeled and sliced thin
1/2 cup fresh minced basil, any variety
Fresh ground pepper, to taste
Heat oil in a skillet over medium-high heat. Add onions and sugar and cook, stirring occasionally, until wilted and golden, about 10 to 12 minutes. Remove from heat and cool before using.
