Pizza, Five Mushroom (D)

Yield: 4 small pizzas

3 tbsp. olive oil
1/2 cup chopped onions
1 tbsp. minced garlic
1 pound assorted fresh sliced mushrooms (or dried, reconstituted), such as button, morel, shitake, portabella, crimini, wood ear, chanterelle, oyster
Salt and pepper to taste
2 cups shredded Swiss cheese

Sprinkle on top of pizza.
