3 egg whites
Beat egg whites until stiff (not too dry).
Beat eggs with mayo until combined.
Add spinach, broccoli, chopped onion pieces (or fresh chopped onion), lots of freshly ground black pepper.
Fold in egg whites. Pour into pie crust or greased pan. Sprinkle a little wheat germ on top.
Bake at 375°F, 30-40 minutes.

I had egg whites left over from the challah and needing to come up with a vegetable side dish.
