Pie, Spinach (D, TNT)

Crust:
1 cup butter or margarine
2-1/2 cups flour

1/2-3/4 cup light cream or yogurt
pinch salt

Filling:
1 pound fresh spinach, or frozen (I prefer fresh.)
1/2 cup milk
1 pound light cheese cream 5%, *see Note
1 cup any sharp hard cheese (like cheddar)
4 eggs, separated
5 tablespoons semolina
6 garlic clove, crushed fine
salt and freshly ground pepper

Make Crust:
In food processor mix flour and butter until it resembles crumbs. Add slowly the cream until it become a ball. Do not over mix. (I always write it, but it is important not to over mix this dough.)

Butter it with your hand or spray with Pam in a 12" pie dish. Prick with a fork, cover and let it stay in the fridge for 15 minutes, or more. Bake for only 10 minutes in 375°F hot oven. Take out for further use. (I do it without a pie crust, and it is with less calories, and still very good. If you want to do with a crust is fine too.)

Make Filling:
Wash well the spinach. Boil water in a saucepan with a little salt; add spinach and boil only 3-4 minutes. Drain and wash in cold water. Squeeze well spinach with your hand to access all water. Cut to small slices, put back in saucepan, and cook for another 5 minutes with the milk. Cool.

In a big bowl put all ingredients but the egg whites. Mix real well until all well blended.

Beat egg whites until stiff, and fold in to the spinach mix. (It should be light in texture.) Pour over the crust and continue to bake in reduced heat 350°F hot oven for about 40-45 minutes. (It should be dry on the top.) If you do not use crust, arrange spinach mix on a well buttered rectangular dish, and bake as written above.

Note: In Israel the cream cheese is much softer that you have in U.S. It is not the Philadelphia kind of cheese. It should be easy to spread, may be you have a whipped cheese? So try it.

Poster's Notes:
Not everybody loves spinach. I remember as a child, I hated it. My mother forced me to eat telling me: "It is good it for you Rinale". It helped like "Toeites Bankets" (I hope you understand what I wrote.) I refused to eat from that yaki green stuff. And now . I -----Rina , is sending you all , that recipe? . YES!!!!! I do, I confess. I love spinach, and especially this pie. Even my sons in law and grandchildren loves it. So, you better try it too.
