Pie, Mushroom Squash (P/D, TNT)

Yield: Two 9" quiches

4 medium squash (zucchini)
1 large onion
1 large carrot
1 4-oz. can sliced mushrooms, drained
1/2 cup matzo meal
3 eggs
Salt and pepper to taste
2 frozen pie crusts or 2 9" pans
Corn flake crumbs for topping

Grate squash and sprinkle with salt. Set aside.

Sauté onion, carrot and mushrooms. Add all remaining ingredients. Add squash to mixture. Pour into dough or in pie pans and coat the top with corn flake crumbs.

Bake at 350°F for one hour.

Poster's Notes:
If you are creative you can add Parmesan or Mozzarella cheese to make it Milchig.
