Phyllo Squares, Spinach-Cheese (D, TNT)

Serves: 9-12

6 to 8 sheets phyllo/filo/fillo dough
Melted butter for brushing phyllo

Filling:
10 oz. mozzarella cheese, shredded
6 oz. cheddar cheese, shredded
3/4 lb. cottage cheese
3/4 tsp. salt
2 eggs
15 oz. frozen chopped spinach, thawed and drained well
1-1/2 tsp. parsley flakes

Topping:
1-1/2 cups milk
5 eggs

Spray a 9"x13" baking dish.

Layer 3 to 4 sheets of phyllo/filo/fillo in bottom of pan, brushing each with melted butter.

Mix all filling ingredients and put on top of dough. Cover with 3 to 4 more sheets of phyllo and butter each.

Cut into serving pieces. Chill 1 hour. Mix eggs and milk. Pour over the squares. Refrigerate overnight.

Next day, preheat oven to 375°F. Bake 40 to 50 minutes or until golden brown.
