Mock Kishke IV (P, TNT)

Yield: 3 rolls

2 carrots, grated
2 medium onions, grated
2 large stalks celery, grated
1 4-oz. stick margarine (or just a little less)
1 pound box Ritz crackers, crushed

Grind all vegetables. Melt margarine and add with crackers. Mix with hands. Add salt and pepper to taste.

Divide in 3 parts. Shape into rolls and bake 50 to 60 minutes at 350°F.

This is my Aunt Sally's recipe for mock kishke. It's at least 50 years old.
