Loaf, Carrot-Rice (P, TNT)

Serves: 6-8


4 cups grated raw carrots
4 cups steamed brown rice, (or mashed garbanzos)
1 cup peanut butter, diluted with a little milk or water
1 cup coarse bread crumbs
2 tbsp. onion powder, (or 1/2 cup sautéed onions)
thyme and salt to taste

Mix nut butter with rice.

Add carrots and remaining ingredients. Use crumbled bread as necessary to make right consistency.

Put into casserole or loaf pan. Bake 45-55 minutes at 350°F. Serve with favorite gravy.
