Zucchini Latkes, Savory (D, TNT)
Source: Jewish Hospital Auxiliary Cookbook "Cooking in Clover," circa 1975
Serves: 4

2 cups zucchini, coarsely grated
1/4 cup onion, coarsely grated
1 egg, beaten
1/3 cup milk
2/3 cup pancake mix
1/2 teaspoon salt
1/8 teaspoon. pepper
1/8 teaspoon Italian seasoning
2 tablespoons vegetable oil

Heat oil in large skillet.

Mix everything else together. Drop by tablespoons into skillet and fry over medium heat until golden brown on both sides.

Can be made ahead and frozen. Reheat in oven at serving time.
