Latkes, Zucchini and Pine Nut (D, TNT)

Yield: 8 pancakes

2 medium zucchini, coarsely grated
1/2 small onion, coarsely grated
1/3 cup dried bread crumbs
2 tbsp. grated Parmesan cheese
2 tbsp. pine nuts, finely chopped
1 large egg
1 large egg white
1/8 tsp. table salt, or to taste
1/8 tsp. black pepper, or to taste
1/4 tsp. oregano (my addition)
1/4 tsp. basil (my addition)

Stir together all ingredients and mix well.

Coat a large nonstick skillet with cooking spray and set it over medium heat.

Spoon batter into skillet to form 3" pancakes. Fry on each side until golden, about 3 minutes per side. Repeat with remaining batter. Serve hot.
