2 lbs. small firm zucchini, don't peel; wash well and grate very fine in your food processor
Put the grated zucchini in a sieve over a bowl for about half an hour, squeeze out as much as you can its liquids.
Add to the zucchinis the cheese, eggs and parsley, mix well. Add the flour slowly and mix again until all well blended. Add the salt and pepper to your own taste.
In a skillet warm real well the olive oil. Note: be careful not to let the olive oil to smoke. With a tablespoon, drop one tbsp. of the prepared zucchinis into the hot oil (about 6 patties at a time) and fry them on both sides.
Transfer on a paper towel to absorb the oil as much of as possible. Repeat with the rest of the zucchini.
Serve with any fresh salads and any other kind of cheeses that you desire.

250 grams (about 9 ounces) grated goat feta cheese (I used the goat cheese, you can have the regular one)
1 cup self-raising flour
2 tbsp. chopped parsley
Salt, and freshly grounded black pepper

I just took a picture of the Zucchini Patties that I fried. They don't only look nice, but their taste is " Yammmmmy". As you know me by now, even though I love meat, I like to make all kind of interesting vegetables recipes. There are not too many recipes for Zucchini, and I wonder why. I think it will be nice to get some "TNT" recipes that are made from zucchinis. I found this coming recipe in a journal, and it looks very interesting. It is from Greece, but I made them as patties and not as balls as it was indicated, because from the amount of the ingredients, I had to add more flour and I didn't want to. Any way......the way I made them, and again.....I never ever send a recipe that I myself don't try it and eat it first, it came out as I said " Yammmmmy" I think that this recipe is just right for Shavuoth as another side dish for any salads and cheeses with good fresh country bread.
