Zucchini Latkes I (P, TNT)

Serves: 4

3 medium zucchini; about 1 pound
3/4 teaspoon salt
1 medium onion; chopped fine
2 eggs; or 4 whites
1/4 cup flour
1/8 teaspoon pepper

Shred zucchini and place in colander. Sprinkle with salt and let drain 1/2 hour. Squeeze out water.

Sauté onion until softened. Mix all ingredients together.

Make pancakes on a non-stick or sprayed griddle or skillet. Cook until golden.
