2 large yams or sweet potatoes
Grate the yams. Peel the apple and cut into small pieces. Mix together all ingredients. Make into patties.
Fry in canola or other light oil, being careful not to burn the latkes.

1 apple
3 eggs
1 tbsp. flour or matzo meal
2 tbsp. chopped pecans
1 tbsp. grated ginger
Cinnamon
Dash of salt
Boil the yams until very tender, then mash them. Add all the other ingredients except the flour/matzo meal. Fry carefully or bake in the oven on a non-stick baking sheet.
