1 box potato pancake mix
Follow directions on the box but increase water by 1/2 cup and add an extra egg or egg substitute.
Make mix, stir in potatoes , pulse in processor 3 to 4 times (potatoes have to remain chunky), let stand for 15 minutes and proceed as directed on package.

I combined several ideas for latke and made the best and easiest latkes ever. I used 1 package Carmel Potato Pancake mix, 1 cup water, 2 eggs, and 1 package of hash brown potatoes ready to use. There are some preservatives that keep the potatoes snowy white. I had to add an additional egg, another 1/2 cup water and then pulse it 3 to 4 times in the processor. The pancakes were fabulous! Before I made the adjustments, I tried out the batter. It was too thick and the potatoes were too chunky. The first batch disintegrated in the pan, but looked interesting. I scraped them out into a bowl that I left on the kitchen counter. Within a few minutes, the bowl was empty. The crispy bits were so delicious, that everyone walking past scooped up a handful. I made 5 dozen latkes for 12 adults and 4 little children. I had one latke left!
