Potato Latkes VI (P, TNT)

Yield: Approximately 8 large latkes

6 medium potatoes, peeled (I used 3 white potatoes and 3 sweet potatoes/yams)
1 onion
2 eggs
2 tbsp. flour
2 tsp. baking powder
1 tsp. salt
Dash of black pepper (optional)
Dash of cinnamon (optional)
Oil, for frying

Grate potatoes alternately with chunks of onion (to keep potatoes white). Mix well with rest of ingredients.

Heat about 1/8" of oil in a large skillet. Fry a tablespoon of the mixture until well browned on both sides, adding additional oil as needed. (For less oily latkes, make sure the oil will "sizzle" a drop of batter before adding the spoonsful of batter.) Keep warm on paper-lined tray in 250°F oven until all are cooked.

Serve immediately with sour cream, applesauce, or sprinkled sugar.
