In food processor with metal blade, whirl the egg, onion, matzo meal, salt and pepper until smooth.
Add potatoes. Whirl until mixture is fairly smooth. (If you cut the potatoes ahead, keep them covered with cold water to prevent darkening. Drain well before using)
In large skillet, heat 1/2" oil until hot. Drop into the oil scant 1/3 cupful potato mixture several inches apart. Gently flatten each mound into a 4" circle.
Fry until golden brown, turning once. Drain on paper towels. Keep warm in 200°F oven while frying the rest.
Poster's Note: This is a recipe I have been using for years. It is quick, easy, and delicious. When I am really being strict, I bake them in the oven, first spraying the pan with vegetable cooking spray and also spraying the tops of the latkes. Naturally, they are not as good this way, but much less in calories.
