Parsnip-Potato Latkes I (P, TNT)

3/4 lb. parsnip, peeled
1 small Idaho potato, unpeeled
1 small tart apple, peeled
1/4 cup finely diced onion or onion powder to taste
1/3 cup flour
2 beaten eggs or 4 unbeaten egg whites
1 tsp. salt
1/4 tsp. pepper

Wash, shred, and mix the parsnip, potato and apple. Drain well and add the onion, flour, eggs, salt and pepper. Mix well, fry and enjoy.
