Cheese Latkes (D)

Yield: about 12 latkes

6 eggs, beaten
15 ounces farmer cheese
1 cup matzo meal
6 tablespoons sugar
1-1/2 teaspoons vanilla
3 tablespoons corn oil
1/2 teaspoon salt
3/4 cup corn oil for frying
Sour cream

Place beaten eggs in a large bowl. Add farmer cheese and blend thoroughly. Add matzo meal, sugar, vanilla, 3 tablespoons corn oil, and salt, and mix well.

Heat 3/4 cup corn oil in a deep skillet until it sizzles.

Lower heat, and, using a cooking spoon, spoon batter into the pan, creating pancakes about 3" in diameter. Fry for several minutes, turning when the bottom side is golden brown. Turn and fry for another few minutes until the other side is done.

Drain on paper towel. Serve with applesauce and/or sour cream.
