Cauliflower Latkes (Fritada di Cauliflor) II (P, KLP, TNT)

Serves: 6 to 8

2 small cauliflowers
1 to 2 cups matzo meal
3 or 4 beaten eggs
Salt and pepper
Oil for frying

Cook the cauliflower until soft in salted water. Drain and mash in a food processor. Add the eggs and the matzo meal, salt and pepper.

Form oval patties with wet hands and cook on both sides until brown.
