Oil for sautéeing
Heat oil in frying pan. Add spinach and sauté for a few moments until heated through. Add onion and garlic and stir.
Crumble tofu into pan and stir in. Add turmeric and chili powder and mix very well. When tofu is tinted yellow, add vegetarian crumbles and heat through. Add grated cheese if using, and serve when melted.

1 10-ounce package frozen chopped spinach, thawed and drained
1 tablespoon dehydrated onion
1 teaspoon granulated garlic
1 12-ounce block tofu
2 tablespoons turmeric
1 teaspoon mild chili powder or paprika
1 cup vegetarian crumbles, ground beef style
2 to 3 tablespoons grated Cheddar cheese, optional
I invented this last night when I had a craving for something I used to make in college, called Joe's Special. The original has spinach, ground beef, and eggs. I tried to substitute where I could and came up with this. The cheese isn't necessary but it does add a little bit of body to what would otherwise be a somewhat watery dish.
