Eggplant Sauce and Cheese (D, KLP, TNT)

1 medium eggplant, at least a pound
Sliced cheese-Mozzarella, Cheddar, Swiss, whatever you have around
Marinara sauce; if using jarred, add some extra oregano, thyme, basil or whatever
Grated Parmesan cheese if desired

Slice eggplant in half lengthwise.

Cut deep cross-hatches into the meaty side, but not through the skin. Put face down in a rectangular pan that fits your microwave and zap 4-7 minutes until it is quite soft.

Turn over the eggplant halves and apply sauce, forcing some down into the cuts. Lay on the cheese slices, extra herbs, grated cheese, etc. and microwave about a minute or until the cheese is melted to your taste. Serve a half to each person.

Poster's Notes:
Very quick and easy. Can be doubled if your microwave is big enough, otherwise, just do it in batches.
