1 tablespoon olive oil
Heat a large saucepan over medium heat. Add oil and onions, sauté onions until translucent (about 4 minutes), then add garlic and pepper. Sauté one or two minutes, or until fragrant. Add sweet potatoes, and sauté a few moments, until starting to turn fragrant.
Add broth and curry powder, stir and bring to a boil. When boiling, add rice (the amount depends on the rice, from past experience you may have a feel for the rice you are using. This should end up really soupy but not liquid.) Reduce heat, cover pot, and simmer 30 to 40 minutes until rice is tender.

1 small green pepper (I used a Romanian pepper), seeded and chopped
2 small sweet potatoes (yams), in 1" cubes
1-1/2 cups vegetable broth
1 to 2 tablespoons favorite curry powder
1/2 to 3/4 cup raw rice
I invented this last night. It smelled so good I kept running to taste it in the pot, even while the rice was still raw. I added strips of sautéed chicken breast at the last minute but next time I think I'll leave the chicken out, make it a little spicier, and top it with plain yogurt instead. I also might throw in some peas, just for color contrast. I know combining potatoes and rice seems strange to some but I just loved it and will probably eat it for breakfast tomorrow morning.
