2 cups hot mashed potatoes
Combine first 6 ingredients and beat until fluffy. Shape into croquettes. Dip into egg and roll in crumbs.
Fry in hot deep fat (380°F) until brown.
Poster's Notes:
I have also added canned salmon to the potato mixture. Made them into patties, dipped in egg and bread crumbs and fry as directed above.
