Chili, Vegetarian II (D/P, TNT)

2 tbsp. oil
1 medium onion, chopped
1 stalk celery, sliced
1 medium zucchini, sliced
1/2 tsp. chili powder or to taste
1 tsp. vegetarian Worcestershire sauce
1/4 tsp. red pepper, ground
1 15-ounce can red kidney beans
1 8-ounce can whole kernel corn
1 8-ounce can tomato sauce
1 cup tomato juice
1/2 cup black olives, sliced
1 cup cheddar cheese, shredded (optional)

Heat pan over high heat; add oil and stir fry onions, celery, and zucchini for 5 minutes. Stir in chili powder, Worcestershire sauce, and red pepper.

Stir fry 1 minute then add un-drained beans, un-drained corn, tomato sauce, tomato juice, and olives.

Bring to a boil, reduce heat, simmer, uncovered for 10 minutes. Top with cheese if desired.
