1 can EACH red kidney beans, black beans, and white beans of your choice, rinsed and drained
In large pot, sauté oil, pepper, and onion about 5 minutes.
Add undrained can of stewed tomatoes, beans, and all seasonings. Mix well and cook covered until done, about 20 minutes.
Serve with brown rice or potatoes. For non-vegan alternative, sprinkle with grated Cheddar cheese.
