Casserole, Vegetable I (P, TNT)

Serves: 4-6

2-3 sweet potatoes
1 onion, chopped
1 parsnip, peeled and cut in chunks
2 celery stalks, sliced
2 carrots, peeled and sliced
1 white potato
1-1/2 cup mixed beans
1/2 cup brown rice
4-5 chopped dates
1 tbsp. oil
water
garlic, cinnamon, honey, tamari sauce, salt and pepper

Cut potatoes in chunks. Sauté veggies lightly in oil. Add the rice, beans, and water to cover.

Bake at 350F at least 45 minutes. Add dates. Season with garlic, cinnamon, honey, tamari sauce, salt and pepper to taste.
