5 medium-large yellow onions, coarsely chopped
Sauté onions in oil until golden. Remove from heat.
Sprinkle flour over the onions.
Mix remaining ingredients into the onion. Pour into an oiled 9"x12" glass pan.
Bake in a medium oven until browned and solidified.

3 tbsp. whole wheat flour
1 package of tofu, cut into small cubes
3 eggs, lightly beaten
1 tbsp. soy sauce
1/4 cup parsley, finely chopped
Pepper, to taste
I have made this a few times and it went over very well. I made the cubes much smaller after the first time and it was even better. Don't add salt, the soy sauce has enough but you can add other ginger, if you like. I used firm or extra firm tofu.
