1 lb. firm tofu
Preheat oven to 350°F.
Slice tofu into 1/4" slices and lightly fry. Arrange fried slices in a baking dish. Sauté onions in oil until transparent. Stir in remaining ingredients. Pour sauce over the tofu and bake for 10-15 minutes, until bubbling.

1/4 cup onions, chopped
6 tbsp. apricot jam
5 tbsp. frozen orange juice concentrate
5 tbsp. water
2 tbsp. prepared mustard
1 tbsp. vinegar
1/2 tsp. coriander
1/2 tsp. salt
1/2 tsp. ginger
1/8 tsp. garlic powder
1/16-1/8 tsp. cayenne (optional)
This is one of our favorite recipes. As it is pareve, it is a nice dish to make during the Nine Days. I hope that you enjoy it as much as we do.
