4 large carrots, peeled and shredded
Preheat oven to 325°F.
Combine well the vegetables, matzo meal, and oil. (You may need to adjust the amounts of matzo meal and/or oil to make it hold together). Season to taste with salt and pepper.
Put into a casserole dish that has been sprayed with nonstick cooking spray. Dot with butter or margarine. Cover tightly with aluminum foil, and bake for 45 minutes.
Uncover and bake an additional 15 minutes.

I made this for a potluck at work and everyone loved it. I originally tried to make a variation on the mock kishke recipes but lacked at least one ingredient for each one so I made this variation up. It almost satisfied my periodic mad craving for kishke.
