Casserole, Cottage Cheese I (D, TNT)

Serves: 3-4

1 pound fat-free cottage cheese
4 egg whites, or 2 whole eggs
1/2 cup flour
1/2 cup cheddar cheese, lowfat, grated
1 large onion, quartered and sliced
1 cup sliced mushrooms, optional

Sauté onions until well browned. Put on bottom of sprayed baking dish.

Mix the rest and pour over.

Bake 30 minutes at 350°F.

Poster's Notes:
Original recipe called for regular cottage and cheddar cheeses and whole eggs. I used 1/2% fat cottage cheese and Emek Light (9% fat).
