Casserole, Cauliflower-Cheese (D)

Serves: 6 to 8

1 medium head cauliflower, broken into florets
1 cup sour cream
1 cup shredded Cheddar cheese
1/2 cup cornflakes, crushed
1/4 cup green pepper, chopped
1/4 cup sweet red pepper, chopped
1 tsp. salt
1/4 cup Parmesan cheese, grated

Cook cauliflower in a small amount of water, covered, for 5 minutes or until crisp-tender. Drain.

Combine cauliflower, sour cream, Cheddar cheese, cornflakes, peppers, and salt. Transfer to a greased 2-quart baking dish. Sprinkle with Parmesan cheese and paprika.

Bake, uncovered, at 325°F degrees for 30 to 35 minutes or until heated through.
