1 medium red onion
Preheat oven to 350°F. Line a cookie sheet with foil, and grease generously with vegetable spray.
In a food processor, coarsely grind the first four ingredients. Transfer to a mixing bowl, and add all remaining ingredients. Mix thoroughly.
Form into 8 patties and place on cookie sheet. Spray again with vegetable spray. Bake for about 30 minutes. Make sure you do not bake longer or they will shrink and dry.

3 large cloves garlic
1/4 cup parsley leaves or chives
1 large potato, peeled and cut into large chunks
1 cup rolled oats
1/3 cup sesame seeds
1/4 cup olive oil
1- 1/2 lbs. firm tofu, squeezed dry on paper towels
Salt and pepper to taste
Seasonings of your choice, no more than 2 at a time: thyme, basil, cumin, ground coriander, pinch cayenne, nutmeg (don't use garlic or onion powder)
This is great during the nine days, when you need alternates to meat meals.
