1 medium-large Portobello mushroom
1/2 teaspoon extra virgin olive oil
1 whole wheat pita or French roll
1/4 cup soft goat cheese, garlic/herb spreadable cheese, Swiss or mozzarella cheese
1/4 cup diced tomato
Sprinklings of fresh parsley, oregano, and black pepper
Brush the mushroom with the olive oil. Roast in 425°F oven, gill side up, about 10 minutes.
Place mushroom into split whole wheat pita, then top with mixture of cheese, tomato, and herbs. We used toasted French rolls and dried seasonings.
Poster's Notes: Here is a recipe that could be considered a kosher cheeseburger because it uses a Portobello mushroom instead of meat. We had it last night and really enjoyed it.
