Burgers, Kasha (P)
Source: "Lean, Luscious and Meatless"
Serves: 4

2 teaspoons oil
1/2 cup kasha, uncooked
1/2 cup onion, chopped fine
2 cups water
1/2 teaspoon salt
3 tablespoons whole wheat flour
1 egg white
1/8 teaspoon pepper

Heat oil in a large nonstick skillet over medium heat. Add kasha and onions. Cook 5 minutes, stirring constantly. Remove from heat.

Bring water to a boil over medium heat. Stir in salt and kasha mixture. Reduce heat to low, cover, and simmer 15 minutes, until water has been absorbed. Remove from heat and stir in flour. Let cool 5 to 10 minutes. Add egg white and pepper, mixing well.

Shape mixture into patties, using 1/3 cup for each one, and wetting your hands slightly to keep mixture from sticking. Heat skillet again over medium heat. Place patties in skillet and flatten to 1/2" thick, using a spatula. Cook until nicely browned on both sides, turning several times.
